Dinner For Two ~ Total Cost $2.25

I am loving our dinner tonight! It’s a “recipe” (and I use the term loosely) that I picked up from SELF magazine when they were having one of their weight loss challenges. All you have to do is bake 2 medium sweet potatoes in a 375 degree oven for 45-50 minutes. Then top with a low fat turkey chili. (I used Hormel Fat Free Turkey Chili). Dollop with sour cream and top with fresh minced parsley. We also had a side salad. Here’s the financial breakdown for this uber-nutritious meal:

  • 1 can Hormel Fat Free Turkey Chili $1.50 (coupon)
  • 2 sweet potatoes $0 (we grew them…add $1.00 if you have to purchase 2)
  • 1/4 container of organic baby greens and spinach $.50 (yep, reduced lettuce)
  • 2 dollops sour cream $.10
  • 1/2 carrot $.10
  • 6 grape tomatoes $.05
  • 2 tbsp parsley $0 (we grow it)

 

 

 

 

 

 

 

And there you have it! Depending on the size of your salad, you have three of your veggie servings in this meal alone. The combination of sweet potato, spicy chili and cool sour cream is fantabulous! You should try it. Really, you should.
