Today’s subject in Fat Mum Slim’s Photo Challenge is “lunch”. I’ve decided to share with you my favorite lunch. I munch on this great combo about four times a week. I make a salad with whatever fresh veggies I happen to have on hand. I then add some red beet eggs, homemade croutons and some beets. I make garlic bread out of multi-grain sandwich thins and light mayo and have a side of homemade pickles. Seriously. Heaven on a placemat. I have my veggies, my grains and my protein. On some days I’ll toss in a tablespoon or so of crumbled blue or gorganzola cheese just to put it over the top. And there it is. Lunch. 🙂
