I’ve said it before…I’m not a big fan of the sweets. But cheesecake? I would NOT walk away from a slice if offered. That would just be rude. I do worry though about all of the fat in cheesecake. That’s why these individual cheesecake “cupcakes” are ideal. You can make them with light cream cheese and they are already portioned for you. Heck, make them even more waistline friendly and bake them in mini muffin pans!
