March Foodie Photo-A-Day Challenge ~ Dessert

I’ve said it before…I’m not a big fan of the sweets. But cheesecake? I would NOT walk away from a slice if offered. That would just be rude. I do worry though about all of the fat in cheesecake. That’s why these individual cheesecake “cupcakes” are ideal. You can make them with light cream cheese and they are already portioned for you. Heck, make them even more waistline friendly and bake them in mini muffin pans!

I made these for the first time for an adult gathering and they were received very well. They are super easy to create and come together in no time. Remember those graham crackers I accidentally broke a while back? They will fit into this recipe quite nicely. If you’d like to see how to make them, click here.     I love these — so simple and easy to make! I have never tried using graham crackers for the crust though — good idea!!
