Sometimes, things just come together. I love when that happens. This one came together for my mom a mere 34 seconds before a dinner party.
We all know that one of the great salads out there are the ones with cranberries, blue cheese and nuts. They are delicious! One night, as my mom was ready to serve the salad at one of her dinner parties, she realized that she didn’t have enough blue cheese dressing. Without hesitation, she went back to the refrigerator, yanked out a bottle of raspberry vinaigrette dressing and poured some in with the blue cheese dressing. She tasted, added another squirt, whisked it together, poured it over the salad and served. Thank goodness I was a guest at this dinner party or I would have missed it! I’ve been making it ever since. Bonus: Adding the raspberry dressing helps lower the calories and fat content of the blue cheese dressing. Woo Hoo!
Side note: Gotta love that reflection in the spoon! hahaha
You can make it as a blue cheese dressing with a hint of raspberry or a raspberry dressing with a hint of blue cheese. I like to mix them half and half. Experiment and see which way you like it. By the way, it works well with ranch too. I found that out when I ran out of blue cheese. 🙂
