March Foodie Photo-A-Day Challenge ~ Cooking Inspiration

The subject for today’s photo challenge is “Cooking Inspiration”. This one is a super easy subject for me. My cooking inspiration is my mom. She is a wonderful cook, loves to entertain and continuously tries new foods.

As I was growing up, there were always wonderful aromas coming from my mom’s kitchen. Don’t get me wrong, she’s not the apple pie kind of mom-cook. She is the dill shrimp salad or artichoke chicken pasta kind of mom-cook. The other kids would come to our house for dinner and just stare at the table like she was trying to serve them octopus. After we’d convince them to take a bite, they were hooked.

When I grew up and moved out, I would ask my mom for her recipes, which she did not have. She would have to guide me over the phone with phrases like “just put some parsley in, until it looks like you have enough”. Huh? Mom, if I knew how much parsley was enough, I wouldn’t be asking you!

My mom still inspires me today. Some of the things she cranks out of that kitchen are truly awe-inspiring. I am happy to report that although I don’t feel that I will ever reach my mom’s level of creativity in the kitchen…I now know how much parsley is enough. Thanks Mom for raising a foodie. I love you and can’t wait to come for Easter dinner!
