March Foodie Photo-A-Day Challenge ~ Vegetable

Today’s subject in the Photo-A-Day Challenge is “vegetable”. Well, I was going to add a picture of one of my fave veggie dishes (mashed cauliflower), but decided to go with something colorful instead because of the beautiful weather we experienced today. So here’s my submission. Mashed Spice Carrots:

Given the fact that we grow carrots and they are not necessarily a family favorite, I had to find a way to cook them that we’d enjoy. I finally found this recipe on food.com and have been making carrots this way since. I love the hint of orange, and often add orange zest for a bigger “zing”. (BTW, I did not “borrow” the photo from the site, it happens to be one that I submitted. hahaha) Make sure to eat your carrots! They are so very good for you!
